Vivacious Orange: Carrot fritters

Color orange is a treat- visually and health-wise. Natural foods, expressing the thirst-quenching color, like tangerines, pumpkin, carrot, mango, papaya, sweet potato etc, are rich in nutrients like Vitamin C (oranges), Vitamin A (mango, pumpkin, carrot, sweet potato, papaya) and help in:

Carrot Fritters

Nothing like a tasty healthy quick snack when you have a house where unexpected guests are always welcome!

Try this healthy fritters recipe to relish the goodness of orange:

Ingredients

6 carrots (peeled and grated)
3-4 spring onions (both green and white parts sliced)
2 eggs (beaten)
1/2 cup chopped fresh coriander
1 tablespoon wholewheat flour
3-4 tablespoons canola oil
1 teaspoon salt
1 teaspoon pepper
1/2 cup grated parmesan cheese

Method

  1. In a large bowl mix grated carrot, coriander and the spring onions.
  2. Add in the eggs and the flour.
  3. Sprinkle salt and pepper into this mix and try binding the mixture with hands. If you feel the mixture is not binding, then add some more flour to it.
  4. In a frying pan, heat canola oil.
  5. Start shaping the mixture into fritters by flattening small portions from the mix.
  6. Shallow fry in the pan. Do not play with the fritters too much; turn them only when a golden brown crust
  7. forms on the side touching the pan.
  8. Flip the fritters to brown the other side.
  9. Take out on a plate with an oil absorbing paper.
  10. Serve hot with sauce or dip.

Oranges and lemon sold for a penny, eat once and enjoy years many!
