Blue Foods: Tandoori Brinjal Recipe

Whether you are a “from the heart” person or “from the brain” person, you will need the blues. The blue vegetables and fruits get their color from the pigments anthocyanin and proanthocyanin which are rich in heart and brain healthy antioxidants.

Fruits and vegetables like-brinjal/eggplant/aubergines, blueberries, prunes,mulberry,  black olives, blue carrots, blue cabbage, blue turnip help in

 Tandoori Brinjal

Brinjal may not tantalize everyone because of its texture and also the fact that it’s a relatively tasteless vegetable. While the humble bharta may have won some fans but this recipe will leave you craving for more:

2 big brinjals

1 cup curd

2 tablespoon garam masala

7-8 garlic cloves

1 inch ginger piece

1/2 cup lemon juice

1 teaspoon salt

1/2 teaspoon turmeric

1 teaspoon red chili powder

1 onion

1 tomato

1-2 tablespoon canola oil

1 tablespoon coriander

1 tablespoon grated cottage cheese


  1. Pre heat the oven to 180 degree Celsius.
  2. Grind together the ginger, garlic, tomato, onion, garam masala, salt and turmeric.
  3. In a bowl mix the masala with curd and lemon juice.
  4. Slice the brinjal into 1/2 inch thick discs and make slits on them.
  5. Marinate the brinjal slices in the curd paste for about 30-40 minutes.
  6. Drizzle some oil on the baking tray and transfer the marinated brinjal slices to it. Spray some oil on the slices.
  7. Bake at 180 degree Celsius for about 20 minutes or until brown. Do not over bake as the slices will dry out.
  8. Place the slices on a serving plate and garnish with coriander and cottage cheese.
  9. Serve hot with any dip or chutney.
